I made my pho broth with only three ingredients

Last night I saw my sister post on facebook that she had pho for dinner so since I am 2000 miles away. I couldn't join her for pho. =( 
So this evening I made my own! hehe I made my broth with only three ingredients! 
My husband and I visited the closest Asian store to us and bought what they had. They didn't have much but we also didn't want to travel far. I thought to myself, "Might as well go to a pho restaurant,"But we took our chance and made the broth with only three ingredients and it turned out pretty darn good. Yum!

Chicken curry noodle - Khaub Poob

I woke up to the sound of rain drops on my window and decided that it is the perfect day to make curry noodle today. In Hmong it is called khaub poob. It is one of my all time favorite noodle. I can eat this for 3 days straight or even more. That's how much I love curry noodle! Yummy! Everyone makes it different but here's the ingredients I used to make mine. Very simple.
